Anytime I can cut corners with baking I am all over it. Why wouldn’t I be when there are great products like Miss Jones Organic Cake Mixes out there? (Find them at most Target stores and other stores near you.)
I was challenged in the Miss Jones Better Baker Challenge to use Miss Jones Chocolate Cake Mix in a new way. My first thought – Whoopie Pies! I was thrilled to find out that Miss Jones products are certified organic, non-GMO, plant-based, responsibly sourced, and contains no artificial colors or flavors! I decided on whoopie pies because they are easy to make (way easier than you think!) and kids & adult love them. In fact, right after I made this batch my husband grabbed one to take back to work. I enjoy baking, especially around the holidays. The smell of something delicious in the oven and the smile on the faces of my children makes it all worth the mess I end up in the kitchen.
You will need:
- Miss Jones Organic Chocolate Cake Mix
- 3 Eggs
- 3/4c Milk
- 1/2 stick butter, melted
- Miss Jones Organic Salted Caramel Frosting
Preheat oven to 350 degrees. Mix cake mix, eggs, milk, and butter for about 2 minutes. Spoon onto a lined baking dish (I love my Silpat!) and bake for about 7 minutes or until each spring when touched. Let cool completely. Open the frosting and mix until smooth. You may need to put it in the microwave for about 5-10 seconds. Spoon frosting onto half of the cake-cookies and place another on top to make a sandwich. Chill until ready to serve. If stacking use wax paper between each because they will stick together!
The nice thing is you can you any combination of Miss Jones cake mix and frostings for a ton of great options!
